Creamy Or Chunky?

Are you ready to celebrate? Today is National Peanut Butter Lovers Day. I certainly hope that you have a jar handy, (providing, of course, that you don’t have an allergy).

I actually celebrate peanut butter nearly everyday. For the past several months, there have been very few days that my breakfast hasn’t been a Peanut Butter Mug Muffin. It’s easy, quick and yummy, and today, I’m sharing the recipe with you.

Ingredients:
1/2 Tbsp Butter (I use Kerry Gold)
1 Egg
2 Tbsp. Peanut Butter (I use Smuckers Natural)
1/4 Tsp Baking Powder
1-2 Tbsp sugar equivalent (I use Truvia)
Cinnamon to taste (optional)
Chopped pecans (optional)
Dark Chocolate chips (optional)
*Yes, that’s correct: no flour of any type in this recipe. It’s magic!

Melt butter in a mug in the microwave.

In a small, bowl stir/whisk egg completely, add all other ingredients and stir until well mixed.
Microwave for 90 seconds, allow to sit for another minute.

Slice, spread with butter and enjoy!

This song is very appropriate for today’s celebration. It’s by The Marathons, 1961. I was too young to remember it being played in its day, but I’ve heard it on oldies radio stations. And although the video is by the Georgia Peanut Commission, the first peanuts grown in the United States were grown here in my home state of Virginia, not far from where we live. (Sorry, Georgia.)
