Saturday, I posted this as my Facebook status: ” Christmasy Saturday at home with my honey….making sweet and spicy pecans, listening to Christmas music”.
A couple of my FB friends commented and asked for the recipe. So I decided that I would really shock everyone by posting two, yes, two, recipes in less than a week.
And if you think the cookbook page for the Applesauce Cake recipe showed signs of use, how about this?
A close-up. I definitely have to read between the lines around the splotches.
This recipe is made by coating pecan halves in a spice blend, so the first part of the recipe lists the ingredients for the blend.
Sweet and Spicy Blend
2 tablespoons light brown sugar
2 tablespoons ground cinnamon
4 teaspoons dried ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground cardamom*
Combine all ingredients in a small bowl. Store in an airtight container. Makes 6 tablespoons.
*A 2-ounce jar of ground cardamom will cost $8; you can use cinnamon in its place.
Sugar And Spice Nuts
Prep: 15 minutes. Bake 55 minutes
Use 1 pound of your favorite combination of raw nuts
3/4 cup sugar
1 tablespoon Sweet Spice Blend
3/4 teaspoon salt
1 egg white
1 tablespoon water
1 pound pecan halves*
Combine first three ingredients in a medium bowl. Set aside.
Beat egg white and 1 tablespoon water in a medium bowl, using a handheld egg beater or a wire whisk, until foamy. (No liquid should remain.) Add pecans, stirring until evenly coated.
Add pecans to sugar mixture, stirring until coated. Place pecans in a single layer on a buttered 15×10 inch jelly-roll pan (cookie sheet).
Bake at 275 degrees for 50 to 55 minutes, stirring every 15 minutes. Spread immediately in a single layer on wax paper, cool completely.
Store in an airtight container.
Makes about 5 cups
*Substitute whole almonds or walnut halves, if desired.
This is how I package the Sweet and Spicy Pecans for gifts; each container holds about a cup.
…and I have a few leftover.
DANGER! VERY ADDICTIVE! BEWARE! ELEVATED TEMPTATION THREAT! PREPARE AT YOUR OWN RISK!

Your blog today reminded me that I need to make my annual batch of spiced nuts – it’s now on my list of things to do tomorrow along with getting all the goodies for Christmas dinner!

Sounds Scrumptious!!! Love Christmas Nuts! I may have to try these. Mom makes nut platters for Christmas gifts. Of course, they’re a big hit with everyone lucky enough to receive one. Hope I’m on the ‘Nice’ list this year!

You’re spending an awful lot of time in the kitchen lately. 😉 Nuts are wonderful, no matter how they are dressed.
My favourite recipes have splodges all over them too. 🙂
